Underwater Restaurants in the Maldives - Dining Below the Surface

You walk down a staircase, duck through a low doorway, and suddenly you're sitting inside the ocean. Not next to it. Not above it. Inside it. The water is right there — above you, beside you, all around you and a parrotfish is hovering about two feet from your face like it's trying to read the menu over your shoulder.

That's the thing about dining underwater in the Maldives. You can read about it, watch videos of it, see a hundred Instagram photos and none of it actually prepares you for what it feels like to be in the room.

People come to the Maldives expecting beauty. The water here is absurdly clear, the kind of clear that makes you stop and stare even when you've seen it before. The beaches are ridiculous. The sunsets are the sort that make normally composed adults reach for their cameras like teenagers. All of that is real, and all of that is worth every rupee of the flight.

But the underwater restaurants are something else entirely. They sit five, six metres below the surface, built into the reef, surrounded by living coral and whatever happens to swim by that evening. You don't control the view. You don't curate it. A napoleon wrasse decides to park itself outside your window during the entrée and that's just what happens. A white-tip reef shark glides past during dessert and your conversation stops mid-sentence.

The food at these places is genuinely excellent we'll get into the details of each one  but honestly, the food almost becomes secondary. You're eating inside an aquarium that nobody built. That's the meal.
