Atmosphere Kanifushi Just Veg Fest Hosts Chef Fabrizio Marino

Atmosphere Kanifushi has revealed a Summer Special, with the highlight being the Just Veg Festival! Renowned Italian Chef Fabrizio Marino will be leading the culinary affair from June 21st to June 26th, 2024, at the acclaimed Just Veg restaurant in the Maldives. This event complements the restaurant's emphasis on both visual attractiveness and delicious plant-based and fruit-centric dishes, which provide numerous advantages.

Chef Fabrizio is set to host a special five-course dinner for guests as part of the Kanifushi Plan. The menu will feature two new dishes: a coconut-milk-based creation filled with flavors and a fusion dish combining Indian and Italian cuisines. The 'Bite By Bite' dish, featuring fresh smoked cottage cheese and vegetables, has made a return due to popular demand. Many of the ingredients for this dish are carefully selected from the restaurant's own garden.

Summer brings a bountiful harvest, with June recognized as Fresh Fruit and Vegetable Month in some regions. Research indicates that prioritizing a plant-based diet can lower health risks. At Just Veg, there is a deliberate push to offer meat substitutes to guests, including protein-rich meals with cottage cheese and legumes, as well as incorporating greens and truffles for added luxury, according to Aman Gomathi, the Director of Food and Beverage at Atmosphere Kanifushi.

Having collaborated with the acclaimed Chef Pietro Leemann, who earned the first Michelin Star for a vegetarian restaurant in 2015, Chef Fabrizio Marino has unveiled his groundbreaking vegetarian restaurant, Maggese, in the picturesque setting of Tuscany.
