Celebrity Navarrese Chef David Yárnoz, acclaimed for his gastronomic revolution at Molino de Urdániz, is taking his signature style to the Indian Ocean with a two-night-only residency at The Residence Maldives on February 14 and 15. It's a once-in-a-lifetime experience to relive the flavors from Northern Spain's most lauded restaurant within this idyllic setting of the Indian Ocean. Chef Yárnoz brings with him an illustrious career of four Michelin stars, two Repsol Suns, and one Green Star in sustainability for his work at the two Michelin-starred Molino de Urdániz. Between Irati Forest and Baztan Valley, Molino de Urdániz unifies tradition with innovative techniques in the kitchen to establish a 'Cuisine of Balance' that encompasses the natural rhythms and local flavors.
For his first residency in the Maldives, Chef Yárnoz will offer a stunning six-course tasting menu where Spanish gastronomy is combined with a Maldivian twist. The creations would include:
Ajo Blanco with mud crab, dried fruits, and ginger
Reef Fish with seaweed and meunière sauce
Guinea Fowl with seasonal mushrooms, foie gras, and aged balsamic
- A decadent dessert of Toasted Milk with black beer ice cream and truffle
The experience will extend beyond the plate, with Chef Yárnoz bringing along his reliable team, which will include head of dining and sommelier Jaione Echarri, and Chef Andrés Ruiz. Another privilege will be a private masterclass for 15 guests that will allow for deeper insight into inspiration and the stories behind each dish.
