

The Ritz-Carlton Maldives, Fari Islands will welcome an exclusive Easter foodie celebration with the arrival of two Michelin-starred Chef René Frank, celebrated for his 'progressive dessert fine dining.' The exclusive two-night stay will showcase Frank's pioneering tasting menu that transcends the traditional boundaries of savory and sweet, and offers guests to embark on a new style of modern dining.
Award-winning chef Frank, hailed by The World's 50 Best and Gault&Millau, is transporting his dessert revolution from the dynamic streets of Berlin's trendy Neukölln to the tranquil, high-end environment of The Ritz-Carlton Maldives. His residency at the resort's La Locanda restaurant, on the exclusive Culinary Island, will provide an unprecedented sensory journey in a breathtaking indoor-outdoor waterside location.
Eight courses will capture Chef Frank's innovative, pastry-driven philosophy of food, redefining traditional flavors of sweet and savory. Courses will blur boundaries, featuring unusual ingredients such as protein-dense legumes, mushrooms, and fermented rice, all balanced with the intrinsic sweetness of fruits and vegetables, supported by acidic herbs, cheese, and citrus.
Highlights of the menu are CODA's best-sellers like candied lettuce with cream cheese and gherkin powder, Raclette Waffle with Kimchi Yoghurt, and Eggplant served on sponge cake with peanut ice cream, apple balsamic, and liquorice salt. The Caviar Popsicle is one dish that stands out, consisting of Jerusalem artichoke and vanilla ice cream with a pecan core covered in 12 grams of Oscietra Caviar. The grand finale includes Cacao & Crispy, a decadent chocolate dessert with crispy caramelized soy milk, cherries, and cherry pit cream.
Chef Frank shared, “Easter is the perfect time to challenge our perceptions of dessert. Why limit sweetness to the end of a meal or special occasions? I’m excited to bring Maldivian influences to our concept and explore how different cultures celebrate dessert.”
This special occasion will be held from April 20th to 26th as part of Ritz-Carlton Maldives' magical Easter program.
