New Culinary Director Todd Adams Joins SO/ Maldives Resort

Todd Adams has been hired by Ennismore, a London-based hotel and hospitality company, to serve as the Director of Culinary for the brand-new SO/ Maldives resort, which will debut this November on a gorgeous private island with views of Emboodhoo Lagoon.

Todd is a member of a long line of family chefs who was born and reared on the Central Coast of New South Wales, Australia. He started his career and progressed through several organizations around Australia before running his own consulting firm, bringing more than two decades of international expertise. He collaborated with luxury hospitality companies there, like Capella Hotels, Habitas, Patina Hotels, Six Senses Hotels & Resorts, in locations like Vietnam, Spain, Cambodia, Israel, Saudi Arabia, and the Maldives.

"I am happy to be a member of the SO/ Maldives opening team and to help this new enterprise develop and succeed. In order to give our customers an exciting and well-coordinated dining experience at all of our venues, Todd says that he wants to bring honesty and creativity to SO/ Maldives' culinary offerings. Todd is passionate about sustainability and the impact we have on the environment as well as ethical farming practices.

Todd oversees the culinary crew and operations at SO/ Maldives, from the Mediterranean-inspired Lazuli Beach Club and the all-day Asian-inspired The Citronelle Club to the iconic Levantine restaurant Hadaba. Todd takes a modern, contemporary, and intuitive approach to cooking. He is a firm believer that the quality of the ingredients immediately affects the finished meal and, as a result, improves the diner's experience. He is eager to use his expertise and enthusiasm for straightforward, ingredient-driven cooking to enhance the overall SO/experience.
