

Patina Maldives keeps redefining the art of island hospitality with its newest epicurean partnership: a two-day culinary pop-up featuring Italy's "King of Carbonara," Chef Luciano Monosilio, and Vienna's irreverently creative mixologists from Veleno Bar. Held on 24 and 25 April 2025, this cocktail and dining evening experience guarantees to deliver a risky interaction of heritage and experimentation against the warm and intimate setting of Farine and the lively backrop of Fari Beach Club.
Widely acclaimed as being among the most creative chefs in Italy today, Chef Luciano Monosilio received his Michelin star at the tender age of 27. At his self-named restaurant in Rome, Luciano Cucina Italiana, he is renowned for reimagining classic Roman cuisine as modern interpretations of flavour, with his carbonara becoming a culinary icon in its own right. His arrival at Patina Maldives marks a sustained focus on crafting outstanding gastronomic experiences that blend technique, narrative, and essence.
The partnership is also raised to a new level by the fiery passion of Veleno Bar, a hidden gem of Vienna's cocktail scene. Renowned for its progressive and eco-friendly style of mixology — featuring the innovative incorporation of upcycled ingredients — Veleno infuses time-honored cocktails with an unapologetically edgy attitude, combining unconventional flavors with a contrarian attitude.

As the twilight hours grow dark, visitors are encouraged to stay on for a semi-buffet dinner, during which Luciano's à la carte specials are incorporated into Farine's regular menu — a considerate nod to seasonal Italian cuisine filtered through the eyes of island living.
The next day offers a special chance to go behind the scenes. At Koen, a hands-on Carbonara Cooking Class will be hosted by Chef Luciano for a group of just 12 guests. This interactive culinary class features a custom mocktail and dessert pair — a thoughtful, flavour-driven exploration of one of Rome's favourite dishes.
Whilst customers get to savour technique and flavour, this creative sharing of practice extends inwards to Patina's internal staff. In the afternoon on a Friday, Luca from Veleno Bar will conduct a cocktail masterclass with Patina's F&B professionals at the Fari Beach Club — highlighting the brand playbook for sustainability, storytelling, and counterintuitive art.
The two-day journey ends on the final evening at Farine, where warmth in shared tables, new thoughts, and higher dining leaves a mark much more significant than on the plate.
Pricing begins from USD 155++ for semi-buffet dinners at Farine (applicable half board credit) and USD 150++ per head for Carbonara Cooking Class, including mocktail and dessert.
